Crispy Cinnamon Doughnut Pancake Mix

A recipe so good you'll want to make it every single weekend. Fluffy, golden pancakes get tossed in an included cinnamon sugar packet for a crispy, doughnut-like coating that is absolutely epic. Add chocolate chips or cocoa powder to the batter for an extra indulgent twist.

- 8 large pancakes, or 12–16 smaller pancakes
Ingredients
Unbleached flour (Niacin, Reduced Iron, Thiamin, Riboflavin, Folate), sugar, baking powder (sodium bicarbonate, corn starch, monocalcium phosphate), salt. Cinnamon sugar packet: granulated sugar, cinnamon.
You Will Need
- 2 cups buttermilk
- 2 eggs
- 2 tbsp vegetable oil (for batter)
- 6 tbsp vegetable oil (for frying)
- 4 tbsp unsalted butter (for frying)
Bonus Recipe: Baja Fish Tacos
Reserve the cinnamon sugar packet for pancakes later. Using half the package (~1¼ cups + 2 tbsp), mix with:
- 1¼ cup beer or water
- 1 tsp salt
- ¼–½ tsp chili powder or hot sauce (optional)
Mix well and let stand 10 minutes. Season fish with salt, dredge in flour if needed, then batter and fry at 350°F until golden brown. Drain on paper towel and serve immediately in tacos with your favourite sauces and garnishes.
Use the remaining mix for pancakes — just follow the directions halved and finish with the reserved cinnamon sugar coating. Makes enough fried fish to serve 4, or 8 thick crispy pancakes.
