Ingredients

Unbleached flour made of hard red spring wheat from Quebec (Niacin, Reduced Iron, Thiamin, Riboflavin, Folate), sugar, dark brown sugar, baking powder (sodium bicarbonate, corn starch, monocalcium phosphate), sodium bicarbonate, salt.

You Will Need

• 1 stick (113.5g / ½ cup) very cold unsalted butter, cut into ½-inch cubes
• ¾ cup + 2 tbsp heavy cream, or ¾ cup buttermilk
• 1–2 bananas of any ripeness, sliced into ½-inch rounds
• 3 tbsp coarse or granulated sugar (for the crackle top)
